As much as I love Chocolate Chia Avocado Pudding, I wanted to make something a little different. I tried a very similar version of this pudding at one of my favorite healthy restaurants in Toronto and knew I wanted to recreate it at home. It took me a few tries, but I figured out a way to make it that you might like.

Collagen has been all the rage in the health and wellness world lately, and I’ve been enjoying it for a few years. Joint pain as well as external pain in hair, skin and nails are improved. I wanted to use gelatin in a recipe, so I got some from one of my favorite collagen companies, Vital Proteins.

Collagen is found in us because it is the most abundant protein in our body. It is found in muscles, tendons, bones, skin, digestive organs and blood vessels. You may be wondering why you should take it as a supplement when it is so abundant. Unfortunately, as we age, collagen production begins to decline. This starts in your 30s.
The type of collagen we choose is important. There are currently no plant-based or vegan sources of collagen. So it usually comes from bovine or marine animals. Either choice is good, but in either case, it’s a good idea to make sure the brand you buy is high quality. For cattle, organic/grass-fed is preferred and marine collagen must be wild-sourced.

Gelatin is a little different. Essentially, this is what makes Jell-O shake. So why exactly would you want to use it? Well, like collagen, gelatin is derived from collagen and obtained from various animal body parts. It may not look very appetizing, but it is very nutritious and contains many of the same benefits as collagen. However, it works a little differently than collagen.
It dissolves in hot water but gels in cold water, making it the perfect addition to my paleo chocolate pudding. Its gelatin-like quality is one of the best things about it because it helps give the same elasticity to our bodies when we consume it.
As with collagen, it’s important to have high-quality gelatin, so unfortunately you won’t find Jell-O available in stores. Aim to use the same grass-fed and organic/pastured cattle to ensure the highest quality.

Many of the same benefits of collagen are found in gelatin because they contain the same amino acids and are structurally very similar. However, the way they are used is very different. Gelatin forms a gel-like consistency when mixed with cold water and can even help thicken hot liquids like soups, stews, and this paleo chocolate pudding! It becomes more practical for cooking.
Wait a minute, what does it mean to have flowers blooming on gelatin? This is necessary to achieve a smooth texture in the finished product, which is exactly what we want!
To do this, sprinkle the gelatin in the liquid (in this case, some coconut milk) and let sit for 3-5 minutes. Just leave it alone. Don’t bother yet!
Once this is done, heat the remaining ingredients (coconut milk, cocoa powder, honey, vanilla and salt).

Once it’s heated in there, slowly add it to the bowl with the gelatin, stirring to combine. Stirring with a whisk will help prevent lumps and ensure everything is smoothly mixed as intended.
From here, place a strainer over the jar where you will store the chocolate pudding. Pour the mixture through a sieve and put in the refrigerator to firm up. Cover and let sit for at least 2 hours or until firm.
This paleo chocolate pudding contains gelatin, which makes it quite thick and jelly-like. I really like this kind of consistency, and adding gelatin also increases the protein content.
Depending on how much gelatin you add to the pudding, you can make it thicker or thinner. It’s your choice.
Vegan Collagen Blended Chia Pudding
If you choose to use the original recipe as described below, the consistency will be significantly thicker. If you choose to use 1 tablespoon of gelatin per 2 cans of coconut milk, the consistency will be thinner and more like pudding.
For example, look at the first photo below and compare it to the second photo in terms of consistency. The first photo is made with 1 tablespoon of gelatin in 1 can of coconut milk, and the second photo is made with 1 tablespoon of gelatin in 2 cans of coconut milk.
If you want to make this keto, use Lakanto Monkfruit Sweetener like I did. I use this type of sweetener instead of stevia because I think it tastes the best. That said, I don’t follow a specific diet (in fact, I’m anti-diet), but I know many people still do for other health reasons. So I give you options with this recipe.
You can use other sugars instead, such as coconut sugar, brown sugar or honey. If you want, you can add additional toppings like coconut whipped cream, chocolate chips, fresh berries (or pomegranate) or none at all. The choice is yours!

This paleo chocolate pudding is quite rich, so I recommend serving it in small portions. But do it! I used a small glass jar to store it.
