How To Lattice Pie Crust (easy Video Tutorial)
Pie crust design is a form of art. There are so many pie shell layouts, but the classic mesh texture is my favorite. Simple yet stunning mesh designs never go out of style. Although this is a very common way to shape pie dough, making a pie crust can seem intimidating. Today I’m sharing a complete tutorial with a helpful video so you can be confident with your next pie artwork.
The pie shell is made of woven pie dough. Strips of dough are placed over the pie filling, layered above and below each other to create a textured basket appearance. Not only is lacing a beautiful way to decorate a pie, the holes in the strips allow steam to escape. Without these vents, filling the fruit pie can cause a small explosion in your oven. It’s not beautiful!!
I have a whole list of the best pie baking tools, but here’s what you’ll need for this lattice design:
Networking doesn’t work unless you start with quality pie dough. Don’t waste your efforts from the beginning. I recommend my favorite pie crust, which uses butter and shortening for flavor and consistency, or an all-butter pie crust. Either of these two are great options for your mesh pie shell, as they are sturdy yet incredibly lightweight and flaky.

After you make the lace, you will have extra dough around the perimeter of the pie. Feel free to trim off excess dough, but if you want enough dough to have a nice edge for piping or pleating, don’t trim too much or at all. Instead, fold the strips back into the pie and attach to the bottom pie shell. I realize this may not make much sense, but the video tutorial above shows how I do it.
You can also see how I flute the edges using the thumb and forefinger on one hand and the index finger on the other. The floating pie crust covers the top and bottom crusts with a beautiful scallop pattern.
