Healthy Lunch Ideas To Make – While I’m all for having a fried egg for lunch or slathering a fried egg on my avocado toast or roasting and sautéing some veggies for lunch, I know that’s not possible when you work outside the home. These are all meals that you can make or prepare ahead of time and still taste great at mealtime.

This is a big thing for me. No matter how amazing the salad I make for dinner is, when I sit down at the table, whether it has croutons or last night’s chicken, it still tastes like a sad table and I want something tastier. Now, I’m sharing a bunch of my favorite hearty salads below, but there are tons of other meal ideas here, from soups to bowls to full meals! Eddie needs real food, so here are some below.

Below are meal ideas that take a few minutes to put together once it’s dinner time (i.e. chopping tomatoes or a hard-boiled egg, assembling a lettuce wrap, etc.), but the point is, that you can actually prepare the ingredients ahead of time. It’s time to make your food worth it. There are meal ideas that can be completely prepared in advance and reheated. I find that the secret is for me to make a meal that I really like, even if it takes a little time to prepare the Sunday before. As I mentioned above, I often eat breakfast for breakfast! I like to make some egg versions if I’m home, but I also make overnight oatmeal and chia puddings that can easily be made ahead.

Most of these salads can be made the night before, and if they don’t have protein, add optional as desired. Some, like Greek salads and chickpea salads, taste better as they sit.

All of these soups are delicious if you make them a day or two in advance. For pasta soups, you can always cook separately and add in the morning or right before eating so it doesn’t absorb too much liquid. I like to make soup for breakfast and freeze half of it. This way the dish will already be ready in a few weeks/months or you can even eat it for dinner at some point.
