I long ago abandoned boxed mixes in search of melt-in-your-mouth combinations of flavors, toppings, and textures. I believe cake should be decadent, life-changing and worth celebrating! And I believe that everyone should be able to bake such a cake – and I’m here to teach you! But I’m not a big fan of frosting, so I wanted to make it with mini cookies on the bottom to cut out some of the frosting.

Then I had an empty cake… I was having a party… So I thought I’d try it on a cake.

I like it. It was a big hit with the kids, who liked to point out that it was “a family of Christmas trees: Dad’s tree, Mom’s tree, and Baby’s tree.” The decoration didn’t last long…more on that later. But this is a really easy homemade Christmas cake that anyone can make with very little supplies!

Easy Christmas Cake Recipe

This idea works for any size and shape cake. Start by frosting the cake with white frosting and make it smooth. (Click the link for a full cake frosting tutorial.)

Remove the cookies from the wrappers (or bake them without the wrappers) and place the larger cookie upside down on top of the cake, using a little frosting to “glue” it in place.

You can cut off the top of the cake if it is uneven or has a large dome on top. Your tree may lean a bit (like mine) if you don’t.

Using the green frosting and a Wilton Tip 1M, swirl the cookies like you would a cookie swirl.
